Blawd are an independent bakehouse that supply all our fresh cakes and doughnuts at The Pilcrow. We spoke to Iwan at Blawd to get a little insight into their world...

Blawd is Lucy Jackson and Iwan Roberts.

WHAT IS BLAWD?

We make baked goods without the pretence. Available at The Pilcrow, All The Shapes, The Font, North Tea Power, Common, Rapha Cycle Club MCR, a variety of markets in the north west region and we’re available for bespoke orders.

WHY IS BLAWD?

Blawd (B-LOUD) is welsh for flour. And boy do we use flour. But often we don’t, we bake GF stuff all the time, ever since the great Gluten intolerance epidemic of 2012. We also make Vegan cakes on the reg.

YOUR DOUGHNUTS HAVE BEEN GETTING A LOT OF PRAISE IN MANCHESTER SINCE YOU STARTED BAKING. CAN YOU TELL US A LITTLE ABOUT YOUR METHODS?

Patience. The process is a 24hr one, from mixing to filling. We give it all the the time it needs to fluff up just right when fried. We make all the jams and custards in house.
When we’re out on tour we persevere to fry the doughnuts live and on site. You can’t beat a warm doughnut in hand and in your mouth.

WHAT/WHO ARE BLAWD’S INSPIRATIONS?

Jerry Garcia, Roy Schneider , Village fetes, our cat “cath” which is welsh for cat. Also, William Eggleston, he’s a good EGG.

IF YOU COULD PAIR A BEER WITH ANY BLAWD BAKE, WHAT WOULD IT BE?

Rarely do i have a suggested sweet + beer pairing and think that “Boy did that work". However, we recently made a Magic Rock Highwire Grapefruit custard doughnut for our tenure at IMBC with our good pals Idle Hands. That was banging, super sharp, fizzy on the tongue with the IBU and sweetness of the custard level pegging.

It’s hard to pair desserts and beer. But if i was to suggest a pairing, i would suggest anything sour. Cuts right through the sweetness and a great cleanser for your following beer post dessert consumption.

WHAT ARE YOU INTO AT THE PILCROW?

I think Joe Hartley & co have done an amazing job. Im big into the tiles which run along the edge of the bar and a big fan of the beer taps and pumps. They also sell sandwiches from our good friends at Pollen, I had one yesterday! Salami , gherks, cheese & mustard on the finest slice you can get in Manchester. Twas a dream!

WHAT’S NEXT FOR BLAWD?
 
Mince pie doughnuts, a mobile doughnut production vehicle and hopefully we'll break ground on our next venture later next year
